Ingredients :

  • 2 cucumbers
  • 10 coriander stalks
  • 2 mint stalks
  • 7 cherry tomatoes
  • 2 brown mushrooms
  • 3 green onion stalks (can be replaced with half a purple onion)
  • Baked small sweet potato
  • A cup of black lentils
  • A handful of unsweetened cranberries
  • 3 walnuts
  • For seasoning:
  • Juice from half a lemon
  • Tablespoon of raw tahini

Preparation: Cut the sweet potato into cubes and bake at 200 degrees until it softens. Cook the black lentils for about half an hour, strain well. Cut all the vegetables. Add the sweet potatoes, lentils and cranberries. Add the tahini and walnuts.
