Quinoa and sweet potato salad like in restaurants that you can easily prepare!
Ingredients :
A cup of quinoa
1/2 medium sweet potato with skin
A generous handful of parsley/coriander
A handful of unsweetened cranberries
A handful of peeled and sliced almonds
Seasoning:
3 tablespoons of olive oil
Juice from a whole lemon
3/4 teaspoon of salt
1/2 teaspoon black pepper
Preparation :
Prepare the quinoa according to the manufacturer's instructions
(a cup of quinoa, a cup of water, cook for about 20 minutes)
Wash the sweet potato skin well, cut into small cubes, sprinkle with oil
and bake at 200 degrees for about 25 minutes.
Chop the parsley and combine with the other ingredients.
Finally add the seasoning and mix well.
