5 medium cucumbers
1/2 bunch parsley (or coriander)
4-5 green onion stalks
A handful of unsweetened cranberries / pomegranate seeds
A handful of sliced and peeled almonds (not roasted)
3 tablespoons olive oil
Lemon juice from 2 lemons
Pinch of salt

Preparation :
Cook the quinoa until soft.
Cut the cucumber, green onion and parsley.
Add the toppings, mix well and serve.
